  • 100g brown sugar
  • 1 pinch of fleur de sel

Preparing the caramel

1. In a saucepan, melt the butter with the brown sugar and fleur de sel. The mixture should reach 160°C. 2. Pour into silicone molds of your choice or onto a silicone mat to create a caramel slab.

Making caramel chunks

3. To make caramel chunks for half-baked heart cookies, pour the caramel onto a baking sheet and let it cool. 4. Roughly chop the cooled caramel with a knife to create chunks.
